Re gan mian is a typical breakfast affair of Wuhan, the capital of the Hubei province in central China. It is made of soda-based noodles called jian mian in which a mixture of sauces and dried vegetables are added. Many stalls that make re gan mian will have their own twist in what they add, creating signature tastes. The typical bowl will have soy sauce, sesame paste, pickled vegetables, chopped garlic chives and chili oil. For a person from a highly developed region, the scene of the stall may look unhygienic. Noodles and ingredients used not just for re gan mian are in huge bowls on a table and seem to have been sitting there for days. People will buy re gan mian on their way to work. There is always a stall in an apartment area or on the roads making it easy for everyone no matter how they get to work to buy it. When preparing re gan mian the noodles are placed into a Chinese strainer (a cone-shaped strainer) and dipped briefly into boiling hot water and swirled and drained. They are then poured into the paper bowl and the ingredients are poured on top in the order as described above. Depending on a person's mood they may opt out in having the chili oil. The buyer then grabs the bowl while passing over the money at the same. They then mix the noodles and ingredients through with their chopsticks before eating. It is very popular and is usually sold in bowls in breakfast restaurants or in pushcarts along the streets of Wuhan. For the short span of time its in the hot water its surprising how long it retains its heat for. It is even more popular during the very cold winter of Wuhan as opposed to the high temperatures of its summer.

Many foreigners who come to Wuhan to work and enjoy re gan mian are few and far between. It's known for being very spicy due to the chili oil and the locals admire anyone who enjoys it. As do coffee lovers search for the perfect coffee, people search for the perfect re gan mian. People are willing to travel further to buy the best tasting re gan mian for them.

Re gan mian as of late 2010 was priced from 3元(yuan), equivalent to 50cents(AU) each depending on the seller.

Wuhan's re gan mian, along with Shanxi's dao xiao mian, Liangguang's yi fu mian, Sichuan's dan dan mian, and northern China's zhajiang mian, are collectively referred to as "China's five famous noodles."
